Description

  • ½ cup (100g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 12 tablespoons milk
  • For Classic Chocolate Chip: ½ cup semi-sweet chocolate chips
  • For Salty Peanut Butter: ¼ cup natural peanut butter, ½ cup mini chocolate chips
  • For Brown Sugar Snickerdoodle: 1 teaspoon cinnamon, ½ teaspoon cream of tartar, 1 tablespoon sugar, 1 teaspoon cinnamon (for rolling)
  • For Mint Chocolate Chip: 1 teaspoon peppermint extract, ½ cup dark chocolate chips

Instructions

  1. Heat-treat the flour by spreading it on a microwave-safe plate or baking dish. Microwave in 30-second intervals or bake at 350°F for 5-7 minutes until it reaches 160°F. Let cool completely.
  2. In a large bowl, cream the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy (2-3 minutes).
  3. Add the vanilla extract and salt, mixing on low speed. Add milk one tablespoon at a time until the dough is moist but not sticky.
  4. Add the heat-treated flour and mix on low speed until just combined. Do not overmix.
  5. Divide the dough into four equal portions if making multiple flavors.
  6. Customize each portion: Fold in chocolate chips for Classic; mix in peanut butter and chips for Salty PB; mix cinnamon and cream of tartar into dry ingredients for Snickerdoodle; add peppermint extract and dark chips for Mint Chip.
  7. Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
  8. Freeze the tray for at least 30 minutes until firm.
  9. Transfer frozen bites to an airtight container for storage.

Notes

Ensure butter is softened but not melted. If dough is too sticky, chill in fridge for 10 minutes or add flour. If too crumbly, add milk teaspoon by teaspoon. Heat-treating flour is essential for safety to kill bacteria. These can be stored in the freezer for up to 3 months.
