Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a small bowl, combine flour, brown sugar, cinnamon, and 1/4 teaspoon salt. Cut in cold cubed butter using a fork until the mixture resembles coarse crumbs. Set aside.
  3. In a large bowl, whisk together rolled oats, baking powder, and 1/2 teaspoon salt.
  4. Add milk, Greek yogurt, eggs, honey, and vanilla to the dry ingredients. Whisk until smooth.
  5. Fold in the diced apples until coated. Let the mixture sit for 5 minutes to allow oats to soften.
  6. Pour the oatmeal mixture into the prepared baking dish and spread evenly.
  7. Sprinkle the streusel topping over the entire surface.
  8. Bake for 45-50 minutes until the top is golden brown, the streusel is crisp, and the center is set.

Notes

Do not use quick oats or steel-cut oats; old-fashioned rolled oats provide the best texture. If using frozen apples, do not thaw them, but consider adding an extra tablespoon of flour to the base as they release more moisture. Let the oatmeal cool completely before cutting to ensure it holds its shape.
