Instructions
- In a large bowl, whisk together flour, salt, and sugar. Cut in cold cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Sprinkle ice water one tablespoon at a time, mixing gently until the dough just holds together when pinched. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes (or freeze for 15 minutes).
- While dough chills, peel, core, and slice apples into ¼-inch wedges. Toss with granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let sit for 10 minutes, then drain excess liquid.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a floured surface, roll dough into a 12-inch circle. Transfer to the baking sheet.
- Mound apple slices in the center, leaving a 2-inch border. Fold edges of dough over apples, pleating as you go.
- Brush crust with egg wash and sprinkle with remaining sugar from the apple bowl.
- Bake for 45-50 minutes until crust is golden brown and apples are tender. Cover edges with foil if they brown too quickly.
- While galette bakes, combine brown sugar, heavy cream, butter, cinnamon, and salt in a small saucepan over medium heat. Whisk until butter melts and mixture comes to a gentle boil. Bubble for 1-2 minutes until slightly thickened. Remove from heat.
- Let galette cool for 10 minutes. Drizzle with warm cinnamon caramel and sprinkle with flaky sea salt if desired. Slice and serve warm.
Notes
Keep butter cold for a flaky crust. Drain apple juices well to prevent a soggy bottom. For extra flakiness, freeze the assembled galette for 15 minutes before baking. The caramel sauce thickens as it cools; add a teaspoon of warm water if it becomes too thick.
