  • Pinch of salt
  • Flaky sea salt (optional)
  • 1 egg beaten with 1 tbsp water (for egg wash)

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar. Cut in cold cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized butter pieces.
  2. Sprinkle ice water one tablespoon at a time, mixing gently until the dough just holds together when pinched. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes (or freeze for 15 minutes).
  3. While dough chills, peel, core, and slice apples into ¼-inch wedges. Toss with granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let sit for 10 minutes, then drain excess liquid.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. On a floured surface, roll dough into a 12-inch circle. Transfer to the baking sheet.
  6. Mound apple slices in the center, leaving a 2-inch border. Fold edges of dough over apples, pleating as you go.
  7. Brush crust with egg wash and sprinkle with remaining sugar from the apple bowl.
  8. Bake for 45-50 minutes until crust is golden brown and apples are tender. Cover edges with foil if they brown too quickly.
  9. While galette bakes, combine brown sugar, heavy cream, butter, cinnamon, and salt in a small saucepan over medium heat. Whisk until butter melts and mixture comes to a gentle boil. Bubble for 1-2 minutes until slightly thickened. Remove from heat.
  10. Let galette cool for 10 minutes. Drizzle with warm cinnamon caramel and sprinkle with flaky sea salt if desired. Slice and serve warm.

Notes

Keep butter cold for a flaky crust. Drain apple juices well to prevent a soggy bottom. For extra flakiness, freeze the assembled galette for 15 minutes before baking. The caramel sauce thickens as it cools; add a teaspoon of warm water if it becomes too thick.
