- 3 cups shredded rotisserie chicken (about 450g)
- 4 tablespoons unsalted butter
- ¼ cup all-purpose flour
- 2 cups low-sodium chicken broth
- ½ cup heavy cream
- 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 bay leaf
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper (adjust to taste)
- 2 sheets pie crusts
- 1 egg beaten with 1 tablespoon water (for egg wash)
- Sesame seeds or poppy seeds (optional)
Instructions
- Preheat oven to 400°F (200°C). Shred chicken and mince garlic.
- Melt butter in a large skillet over medium heat. Add flour and whisk constantly for 1-2 minutes until the mixture is a light golden paste.
- Slowly pour in chicken broth while whisking vigorously to prevent lumps. Add heavy cream, garlic, thyme, bay leaf, salt, and pepper. Simmer for 3-4 minutes until the sauce thickens enough to coat the back of a spoon.
- Stir in shredded chicken and frozen vegetables. Remove bay leaf. Taste and adjust seasoning. Transfer mixture to a 9-inch pie dish.
- Place pie dish on a baking sheet. Lay pie crust over filling, trim edges, and crimp. Cut 2-3 slits in the top for steam.
- Brush crust with egg wash and sprinkle with seeds if using. Bake for 30-35 minutes until crust is deep golden brown and filling is bubbling.
- Let rest for 10 minutes before serving to allow filling to set.
Notes
Keep the crust cold for flakiness. Always bake on a rimmed baking sheet to catch drips. Ensure the filling is thick before baking to avoid a soggy bottom. Can be made vegetarian by substituting chicken with mushrooms/cauliflower and broth with vegetable broth.
