  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 bay leaf
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper (adjust to taste)
  • 2 sheets pie crusts
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Sesame seeds or poppy seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Shred chicken and mince garlic.
  2. Melt butter in a large skillet over medium heat. Add flour and whisk constantly for 1-2 minutes until the mixture is a light golden paste.
  3. Slowly pour in chicken broth while whisking vigorously to prevent lumps. Add heavy cream, garlic, thyme, bay leaf, salt, and pepper. Simmer for 3-4 minutes until the sauce thickens enough to coat the back of a spoon.
  4. Stir in shredded chicken and frozen vegetables. Remove bay leaf. Taste and adjust seasoning. Transfer mixture to a 9-inch pie dish.
  5. Place pie dish on a baking sheet. Lay pie crust over filling, trim edges, and crimp. Cut 2-3 slits in the top for steam.
  6. Brush crust with egg wash and sprinkle with seeds if using. Bake for 30-35 minutes until crust is deep golden brown and filling is bubbling.
  7. Let rest for 10 minutes before serving to allow filling to set.

Notes

Keep the crust cold for flakiness. Always bake on a rimmed baking sheet to catch drips. Ensure the filling is thick before baking to avoid a soggy bottom. Can be made vegetarian by substituting chicken with mushrooms/cauliflower and broth with vegetable broth.
