Crispy, baked buffalo chicken egg rolls that are better than takeout. These appetizers use rotisserie chicken, cream cheese, and buffalo sauce for a tangy, spicy filling wrapped in spring roll wrappers and baked until golden.

- 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 4 stalks green onions, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 package spring roll wrappers (12–20 sheets)
- Vegetable oil or avocado oil (for brushing)
- 1 teaspoon cornstarch mixed with 1 tablespoon water (for sealing)
- Blue cheese or ranch dressing (for dipping)
Instructions
- Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper.
- In a medium bowl, combine shredded chicken, softened cream cheese, cheddar cheese, green onions, garlic powder, and onion powder.
- Add buffalo sauce gradually (start with 1/4 cup), mixing until the filling is moist but not soupy. Adjust heat to taste.
- Unfold one spring roll wrapper on a counter like a diamond. Keep unused wrappers covered with a damp towel.
- Place 2-3 tablespoons of filling in the center of the wrapper.
- Fold the bottom corner up over the filling, then fold in the left and right corners toward the center.
- Roll tightly toward the top corner. Brush the top corner with the cornstarch slurry and finish rolling, pressing firmly to seal.
- Place egg rolls seam-side down on the baking sheets, leaving space between them.
- Brush the tops and sides generously with oil, then flip and brush the bottoms.
- Bake for 15-18 minutes, flipping halfway through, until golden brown and crispy on all sides.
- Cool on the pan for 2-3 minutes before serving with blue cheese or ranch dressing.
Notes
Keep spring roll wrappers covered with a damp towel to prevent drying out. Use a cornstarch slurry to seal the edges to prevent bursting. For extra heat, add diced jalapeños. For a vegetarian version, substitute chicken with roasted cauliflower.
