Description

Crispy, baked buffalo chicken egg rolls that are better than takeout. These appetizers use rotisserie chicken, cream cheese, and buffalo sauce for a tangy, spicy filling wrapped in spring roll wrappers and baked until golden.

  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 stalks green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 package spring roll wrappers (1220 sheets)
  • Vegetable oil or avocado oil (for brushing)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (for sealing)
  • Blue cheese or ranch dressing (for dipping)

Instructions

  1. Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, combine shredded chicken, softened cream cheese, cheddar cheese, green onions, garlic powder, and onion powder.
  3. Add buffalo sauce gradually (start with 1/4 cup), mixing until the filling is moist but not soupy. Adjust heat to taste.
  4. Unfold one spring roll wrapper on a counter like a diamond. Keep unused wrappers covered with a damp towel.
  5. Place 2-3 tablespoons of filling in the center of the wrapper.
  6. Fold the bottom corner up over the filling, then fold in the left and right corners toward the center.
  7. Roll tightly toward the top corner. Brush the top corner with the cornstarch slurry and finish rolling, pressing firmly to seal.
  8. Place egg rolls seam-side down on the baking sheets, leaving space between them.
  9. Brush the tops and sides generously with oil, then flip and brush the bottoms.
  10. Bake for 15-18 minutes, flipping halfway through, until golden brown and crispy on all sides.
  11. Cool on the pan for 2-3 minutes before serving with blue cheese or ranch dressing.

Notes

Keep spring roll wrappers covered with a damp towel to prevent drying out. Use a cornstarch slurry to seal the edges to prevent bursting. For extra heat, add diced jalapeños. For a vegetarian version, substitute chicken with roasted cauliflower.
