A quick and flavorful weeknight dinner featuring bell peppers stuffed with a creamy, spicy buffalo chicken mixture, topped with melted mozzarella cheese.

- 4 large bell peppers (any color, about 600g)
- 2 tablespoons unsalted butter (30g)
- 2 cups shredded rotisserie chicken (300g)
- 4 ounces cream cheese, softened (115g)
- ½ cup buffalo sauce (120ml)
- 2 tablespoons ranch dressing (30ml)
- 1 cup shredded mozzarella cheese (100g)
- Blue cheese dressing (optional, for serving)
- Green onions, sliced (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Slice about ½ inch off the top of each pepper and remove seeds and membranes to create a hollow cup. If peppers are curved, slice a small sliver off the bottom to help them stand flat. Place in a 9×13 inch baking dish.
- Melt butter in a small skillet or microwave. Brush the inside and outside of each pepper with melted butter. Bake for 10 minutes to soften the peppers.
- While peppers bake, mix shredded chicken, softened cream cheese, buffalo sauce, and ranch dressing in a bowl until a thick, creamy paste forms.
- Remove peppers from oven. Spoon the chicken mixture tightly into each pepper. Top generously with shredded mozzarella cheese.
- Return to oven and bake for 10-15 minutes until cheese is bubbly and golden, and peppers are tender. Optional: Broil for the last 2 minutes for extra char.
- Let cool for 5 minutes. Serve with blue cheese dressing and green onions if desired.
Notes
Pre-roasting the peppers is crucial to ensure they are tender-crisp and not raw. Use full-fat cream cheese to prevent separation. If the filling is too runny, ensure cream cheese is fully softened. For a milder version, use mild buffalo sauce or mix with ranch.
