  • 4 large bell peppers (any color, about 600g)
  • 2 tablespoons unsalted butter (30g)
  • 2 cups shredded rotisserie chicken (300g)
  • 4 ounces cream cheese, softened (115g)
  • ½ cup buffalo sauce (120ml)
  • 2 tablespoons ranch dressing (30ml)
  • 1 cup shredded mozzarella cheese (100g)
  • Blue cheese dressing (optional, for serving)
  • Green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Slice about ½ inch off the top of each pepper and remove seeds and membranes to create a hollow cup. If peppers are curved, slice a small sliver off the bottom to help them stand flat. Place in a 9×13 inch baking dish.
  2. Melt butter in a small skillet or microwave. Brush the inside and outside of each pepper with melted butter. Bake for 10 minutes to soften the peppers.
  3. While peppers bake, mix shredded chicken, softened cream cheese, buffalo sauce, and ranch dressing in a bowl until a thick, creamy paste forms.
  4. Remove peppers from oven. Spoon the chicken mixture tightly into each pepper. Top generously with shredded mozzarella cheese.
  5. Return to oven and bake for 10-15 minutes until cheese is bubbly and golden, and peppers are tender. Optional: Broil for the last 2 minutes for extra char.
  6. Let cool for 5 minutes. Serve with blue cheese dressing and green onions if desired.

Notes

Pre-roasting the peppers is crucial to ensure they are tender-crisp and not raw. Use full-fat cream cheese to prevent separation. If the filling is too runny, ensure cream cheese is fully softened. For a milder version, use mild buffalo sauce or mix with ranch.
