  • 2 large boneless, skinless chicken breasts (about 1.5 lbs / 680g), cut into 1-inch cubes
  • 1 cup diced deli ham (about 150g)
  • 1.5 cups shredded Swiss cheese (about 150g)
  • 1 can (10.5 oz / 298g) condensed cream of mushroom soup
  • 1/2 cup sour cream (full-fat recommended)
  • 1 cup breadcrumbs (Panko preferred)
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Optional: 2 sliced green onions, 1 cup steamed broccoli florets, 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut chicken breasts into 1-inch cubes and dice ham into similar-sized pieces.
  3. In a saucepan over medium heat, combine cream of mushroom soup and sour cream. Stir until smooth. If too thick, add a splash of milk or broth.
  4. In a 9×13 inch baking dish, toss chicken, ham, and shredded Swiss cheese with the soup mixture. Ensure chicken is coated.
  5. Sprinkle garlic powder and dried parsley over the mixture and stir gently to distribute.
  6. Toss breadcrumbs with melted butter until evenly coated. Sprinkle over the casserole and press down lightly.
  7. Bake for 30-35 minutes, or until the sauce is bubbling and the top is golden brown. The internal temperature of the chicken should reach 165°F (74°C).
  8. Let rest for 5 minutes before serving.

Notes

For best results, shred your own Swiss cheese to avoid anti-caking agents. Toasting breadcrumbs in butter ensures a crispy topping. This dish does not freeze well due to the dairy-based sauce; store in the refrigerator for up to 4 days. To reheat, add a splash of milk or cream to restore creaminess.
