  • 2 teaspoons baking powder

  • ½ teaspoon salt
  • 1 ½ cups (225g) fresh blueberries
  • Zest of 1 large lemon

Instructions

  1. Preheat oven to 350°F (175°C). Line a standard 12-cup muffin tin with liners or grease generously.
  2. In a large mixing bowl, whisk together the Greek yogurt, eggs, honey, vegetable oil, and vanilla extract until smooth.
  3. Add the flour, baking powder, baking soda, and salt to the wet ingredients. Stir gently until just combined; do not overmix. Small lumps are okay.
  4. Gently fold in the fresh blueberries and lemon zest using a spatula. If using frozen blueberries, toss them in a teaspoon of flour first to prevent sinking.
  5. Divide the batter evenly among the 12 muffin cups, filling them about ¾ full.
