Description

These no-bake energy bites combine creamy cottage cheese and cream cheese with fresh blueberries and oats for a protein-packed, low-sugar snack that tastes like cheesecake.


Ingredients

  • 1 cup old-fashioned rolled oats (90g)
  • 1/2 cup cottage cheese (120g)
  • 2 oz cream cheese, softened (55g)
  • 2 tablespoons honey (30ml)
  • 1/2 cup fresh blueberries (75g)
  • 1 teaspoon vanilla extract (5ml)
  • 1 teaspoon lemon zest (from 1 lemon)
  • Pinch of salt

Instructions

  1. Blend the cottage cheese in a blender or food processor until completely smooth with no visible curds.
  2. Pour the smooth cottage cheese into a medium mixing bowl.
  3. Add the softened cream cheese, honey, vanilla extract, lemon zest, and salt to the bowl.
  4. Mix the wet ingredients together with a spoon or spatula until well combined and creamy.
  5. Add the rolled oats and fresh blueberries to the bowl.
  6. Stir gently but thoroughly until the oats are evenly distributed, being careful not to crush the blueberries.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the oats to soften.
  8. Remove the mixture from the fridge. If too sticky, add a tablespoon of oats.
  9. Roll the mixture into 1-inch balls using your hands or a small cookie scoop.
  10. Place the bites on a plate or baking sheet lined with parchment paper.
  11. Refrigerate the rolled bites for another 15 minutes to firm them up before serving or storing.

Notes

Blend cottage cheese thoroughly for a smooth texture. Chill the mixture for at least 30 minutes to prevent stickiness. If using frozen blueberries, thaw and drain them completely. For a gluten-free version, use certified gluten-free oats. For dairy-free, substitute cottage cheese with blended silken tofu and cream cheese with cashew cream cheese.
