  • 2 large eggs
  • 68 slices thick-cut bacon
  • 2 tablespoons salted butter
  • 2 slices sharp cheddar cheese
  • Salt and black pepper to taste
  • Hot sauce or salsa (optional)

Instructions

  1. Toast the English muffins until golden brown and slightly crunchy.
  2. Place a large skillet over medium heat and add bacon slices in a single layer.
  3. Cook bacon for 4-5 minutes on the first side, then flip and cook for another 3-4 minutes until crispy.
  4. Remove bacon to a paper towel-lined plate, leaving about 1 tablespoon of grease in the pan.
  5. Reduce heat to medium-low. Crack eggs into the pan.
  6. Cook eggs for 2-3 minutes until whites are opaque but yolks are still runny (sunny-side up) or flip for over-easy.
  7. Season eggs with salt and pepper.
  8. Assemble the sandwich: Place cheese on the bottom half of the muffin, top with bacon, then the fried egg.
  9. Optionally return sandwich to pan for 30 seconds to melt cheese.
  10. Cut diagonally and serve immediately.
