- 2 large eggs
- 6–8 slices thick-cut bacon
- 2 tablespoons salted butter
- 2 slices sharp cheddar cheese
- Salt and black pepper to taste
- Hot sauce or salsa (optional)
Instructions
- Toast the English muffins until golden brown and slightly crunchy.
- Place a large skillet over medium heat and add bacon slices in a single layer.
- Cook bacon for 4-5 minutes on the first side, then flip and cook for another 3-4 minutes until crispy.
- Remove bacon to a paper towel-lined plate, leaving about 1 tablespoon of grease in the pan.
- Reduce heat to medium-low. Crack eggs into the pan.
- Cook eggs for 2-3 minutes until whites are opaque but yolks are still runny (sunny-side up) or flip for over-easy.
- Season eggs with salt and pepper.
- Assemble the sandwich: Place cheese on the bottom half of the muffin, top with bacon, then the fried egg.
- Optionally return sandwich to pan for 30 seconds to melt cheese.
- Cut diagonally and serve immediately.
Notes
Toast the bread first to prevent sogginess. Do not overcrowd the pan when cooking bacon to ensure crispiness. For make-ahead prep, cook bacon ahead of time and store in the fridge; reheat components separately before assembling.
