  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 cup (200g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 4 medium ripe but firm pears (about 1.5 lbs / 680g), peeled, cored, and sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons maple syrup
  • 1 tablespoon chai spice blend (or 1/2 tsp cinnamon, 1/4 tsp cardamom, 1/4 tsp ginger, 1/4 tsp cloves)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel, core, and slice pears into 1/4 inch thick wedges. Place in a large bowl and toss with lemon juice.
  3. In a small bowl, whisk together maple syrup, chai spice blend, and cornstarch. Pour over pears and toss to coat evenly.
  4. In a large bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, cardamom, ginger, cloves, and salt.
  5. Add cold cubed butter to the flour mixture. Use a pastry cutter or fingers to work butter into flour until pea-sized crumbs form.
  6. Press one-third of the crumble mixture firmly into the bottom of a 9×13 inch baking dish to form the base.
  7. Pre-bake the crust for 15 minutes.
  8. Remove from oven and spread the pear filling evenly over the hot crust.
  9. Sprinkle the remaining two-thirds of the crumble mixture over the pears and press down gently.
  10. Bake for 40-45 minutes until topping is golden brown and juices are bubbling. Tent with foil if browning too quickly.
  11. Cool completely in the pan on a wire rack (about 2 hours) to allow filling to set.
  12. Cut into squares or rectangles and store in airtight containers.

Notes

Ensure butter is very cold for flaky texture. Pre-baking the crust prevents a soggy bottom. Pears must be firm (Bosc or Anjou) to hold shape. Cool completely before cutting to ensure bars hold together.
