Sturdy, freezer-friendly dessert bars infused with warm chai spices and tender pears, designed specifically for meal prep and grab-and-go convenience.

- 1 cup (226g) unsalted butter, cold and cubed
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 cup (200g) light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 4 medium ripe but firm pears (about 1.5 lbs / 680g), peeled, cored, and sliced
- 1 tablespoon lemon juice
- 2 tablespoons maple syrup
- 1 tablespoon chai spice blend (or 1/2 tsp cinnamon, 1/4 tsp cardamom, 1/4 tsp ginger, 1/4 tsp cloves)
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C).
- Peel, core, and slice pears into 1/4 inch thick wedges. Place in a large bowl and toss with lemon juice.
- In a small bowl, whisk together maple syrup, chai spice blend, and cornstarch. Pour over pears and toss to coat evenly.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, cardamom, ginger, cloves, and salt.
- Add cold cubed butter to the flour mixture. Use a pastry cutter or fingers to work butter into flour until pea-sized crumbs form.
- Press one-third of the crumble mixture firmly into the bottom of a 9×13 inch baking dish to form the base.
- Pre-bake the crust for 15 minutes.
- Remove from oven and spread the pear filling evenly over the hot crust.
- Sprinkle the remaining two-thirds of the crumble mixture over the pears and press down gently.
- Bake for 40-45 minutes until topping is golden brown and juices are bubbling. Tent with foil if browning too quickly.
- Cool completely in the pan on a wire rack (about 2 hours) to allow filling to set.
- Cut into squares or rectangles and store in airtight containers.
Notes
Ensure butter is very cold for flaky texture. Pre-baking the crust prevents a soggy bottom. Pears must be firm (Bosc or Anjou) to hold shape. Cool completely before cutting to ensure bars hold together.
