Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish with butter or non-stick spray.
  2. Dice the onion and bell pepper. Heat butter or oil in a large skillet over medium heat.
  3. Sauté the onions for 3-4 minutes until soft, then add the bell peppers and cook for another 2-3 minutes until slightly softened but still crisp. Transfer to a bowl.
  4. In a large mixing bowl, crack the eggs. Add the heavy cream (or half-and-half), salt, and black pepper. Whisk vigorously for 30-60 seconds until bubbly.
  5. Spread the diced ham evenly across the bottom of the prepared baking dish.
  6. Sprinkle the sautéed onion and pepper mixture over the ham.
  7. Pour the egg mixture evenly over the vegetables and ham.
  8. Sprinkle the shredded cheddar cheese over the top, pressing it down slightly.
