Description

  • 1 cup (200g) packed brown sugar (dark preferred)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 oz (113g) full-fat block cream cheese, softened
  • 2 tablespoons confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. In a large bowl, beat the softened butter and brown sugar on medium-high speed for 3-4 minutes until light and fluffy. Scrape down the sides of the bowl.
  3. Beat in the egg and 1 teaspoon vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture on low speed, mixing only until the flour disappears.
  5. Transfer the batter to the prepared pan and press it into an even layer.
  6. In a medium bowl, beat the cream cheese, confectioners’ sugar, and 1/2 teaspoon vanilla until smooth. Dollop spoonfuls over the batter and swirl with a knife or skewer.
  7. Mix the granulated sugar and cinnamon in a small bowl. Sprinkle evenly over the bars and press gently to adhere.
  8. Bake for 25-30 minutes until edges are golden brown and the center is set but slightly jiggly.
  9. Cool in the pan for at least 30 minutes before lifting out using the parchment overhang and cutting into squares.

Notes

Ensure butter and cream cheese are at room temperature for the best texture. Do not overmix the batter to avoid tough bars. Bars taste better the next day as flavors meld. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
