Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Toast macadamia nuts in a dry skillet over medium heat for 3-4 minutes until fragrant and slightly golden. Cool and roughly chop.
- In a large mixing bowl, cream the room-temperature butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
- Add eggs one at a time, beating well after each addition. Scrape down the bowl. Add vanilla extract and mix until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients on low speed, mixing just until flour disappears. Do not overmix.
- Fold in white chocolate chips and toasted macadamia nuts with a spatula.
- Chill dough for at least 30 minutes (or up to overnight) to prevent spreading and deepen flavor.
- Scoop dough balls (approx. 2 tablespoons) onto prepared baking sheets, spacing 2 inches apart.
- Bake for 12-14 minutes until edges are lightly golden but centers still look soft.
- Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
- Sprinkle with flaky sea salt while warm if desired.
