Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Toast macadamia nuts in a dry skillet over medium heat for 3-4 minutes until fragrant and slightly golden. Cool and roughly chop.
  3. In a large mixing bowl, cream the room-temperature butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Scrape down the bowl. Add vanilla extract and mix until combined.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to wet ingredients on low speed, mixing just until flour disappears. Do not overmix.
  7. Fold in white chocolate chips and toasted macadamia nuts with a spatula.
  8. Chill dough for at least 30 minutes (or up to overnight) to prevent spreading and deepen flavor.
  9. Scoop dough balls (approx. 2 tablespoons) onto prepared baking sheets, spacing 2 inches apart.
  10. Bake for 12-14 minutes until edges are lightly golden but centers still look soft.
  11. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
