  • 8 ounces hard salami or pepperoni, thinly sliced and chopped
  • 8 ounces provolone cheese, sliced and diced
  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Wash and dry the iceberg lettuce. Chop it finely into 1/2-inch pieces, similar to coleslaw mix. Dice the red onion and celery into similar-sized pieces. Halve the cherry tomatoes. Place all vegetables in a large mixing bowl.
  2. Fold the sliced salami and provolone cheese over and chop them into small strips or cubes, aiming for 1/2-inch pieces to match the vegetables. Add the meat and cheese to the bowl with the veggies.
  3. In a small jar or bowl, combine the olive oil, red wine vinegar, Dijon mustard, garlic powder, dried oregano, salt, and pepper. Shake or whisk vigorously until the dressing is emulsified and creamy.
  4. Pour the vinaigrette over the salad ingredients. Toss everything together gently but thoroughly until every piece is coated. Taste and adjust seasoning if necessary. Serve immediately.

Notes

Chop all ingredients uniformly to about 1/2 inch for consistent texture. Salami and provolone are naturally salty, so taste before adding extra salt to the dressing. For meal prep, store the salad base and dressing separately; toss with dressing right before serving to prevent wilting. If salami is difficult to chop, freeze it for 10 minutes first to firm it up.
