Instructions

  1. Preheat oven to 375°F (190°C). Line two standard baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1 cup sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
  6. In a shallow bowl, mix the ½ cup sugar and cinnamon. Scoop tablespoon-sized portions of dough and roll into balls.
  7. Roll each dough ball in the cinnamon sugar mixture until fully coated. Place on prepared baking sheets, about 2 inches apart.
  8. Bake for 8-10 minutes, or until edges are set and lightly golden but centers still look soft.
