  • 16 ounces shelf-stable potato gnocchi
  • 2 cups shredded rotisserie chicken
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

  • Optional: 2 cups fresh spinach, 1 cup chopped broccoli, ½ teaspoon red pepper flakes, 1 cup cauliflower florets

Instructions

  1. Prep ingredients: Dice onion, carrots, and celery; mince garlic; shred chicken; grate Parmesan.
  2. Melt butter in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened but not browned.
  3. Add garlic and Italian seasoning; cook for 1 minute until fragrant.
  4. Pour in chicken broth, scraping up any browned bits from the bottom. Bring to a gentle simmer and cook for 5 minutes to soften vegetables.
  5. Add shredded chicken and gnocchi to the pot. Stir to submerge gnocchi in broth.
  6. Simmer for 3-4 minutes until gnocchi float to the top and are tender.
  7. Reduce heat to low. Stir in heavy cream and simmer for 2-3 minutes until the soup thickens slightly.
  8. Remove pot from heat. Gradually stir in Parmesan cheese until melted and smooth.
  9. If using, stir in spinach or broccoli; residual heat will wilt the greens.
  10. Season with salt and pepper to taste. Serve immediately with extra Parmesan, black pepper, and optional fresh parsley.

Notes
