- 16 ounces shelf-stable potato gnocchi
- 2 cups shredded rotisserie chicken
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese

- Optional: 2 cups fresh spinach, 1 cup chopped broccoli, ½ teaspoon red pepper flakes, 1 cup cauliflower florets
Instructions
- Prep ingredients: Dice onion, carrots, and celery; mince garlic; shred chicken; grate Parmesan.
- Melt butter in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened but not browned.
- Add garlic and Italian seasoning; cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom. Bring to a gentle simmer and cook for 5 minutes to soften vegetables.
- Add shredded chicken and gnocchi to the pot. Stir to submerge gnocchi in broth.
- Simmer for 3-4 minutes until gnocchi float to the top and are tender.
- Reduce heat to low. Stir in heavy cream and simmer for 2-3 minutes until the soup thickens slightly.
- Remove pot from heat. Gradually stir in Parmesan cheese until melted and smooth.
- If using, stir in spinach or broccoli; residual heat will wilt the greens.
- Season with salt and pepper to taste. Serve immediately with extra Parmesan, black pepper, and optional fresh parsley.
Notes
Do not overcook the gnocchi; they cook in 3-4 minutes and will become mushy if left too long. Use low-sodium broth to control salt levels. Always remove from heat before adding cheese to prevent graininess. For best texture, cook gnocchi fresh rather than freezing the soup.
