Description

Recreate the creamy, custardy texture of Starbucks’ popular breakfast bites at home. These gluten-free, high-protein egg bites feature smoked Gouda, bacon, and pork sausage, cooked gently in a water bath for perfect results.


Ingredients

  • 4 large eggs
  • 1/2 cup heavy cream
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup smoked Gouda cheese, finely grated
  • 4 slices thick-cut bacon, cooked and crumbled
  • 4 oz pork sausage (mild Italian or breakfast), cooked and drained

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Cook bacon in a skillet over medium heat until crisp. Drain on paper towels and crumble into small pieces.
  3. In the same pan, cook pork sausage, breaking it up, until browned and cooked through. Drain excess grease and let cool slightly.
  4. Finely grate the smoked Gouda cheese.
  5. In a blender, combine eggs, heavy cream, water, salt, and pepper. Blend on high for 30-60 seconds until completely smooth and frothy. Skim off any bubbles if necessary.
  6. Place silicone egg bite molds in a mini muffin tin or on a baking sheet.
  7. Divide the crumbled bacon and cooked sausage evenly among the molds.
  8. Sprinkle grated Gouda cheese on top of the meat in each mold.
  9. Slowly pour the egg custard mixture into each mold, filling them about 3/4 full.
  10. Place the molds/tin into a large roasting pan. Pour hot water into the roasting pan until it comes halfway up the sides of the molds (water bath).
  11. Transfer to the oven and bake for 25-30 minutes, until centers are just set but still slightly jiggly.
  12. Remove from oven and let cool in the pan for 5 minutes before removing from molds.

Notes

Do not skip the water bath; it ensures a tender, custardy texture by providing gentle, even heat. Grate your own cheese to avoid anti-caking agents that can make the custard grainy. Do not overfill the molds as the eggs will expand. If using metal tins, grease thoroughly with butter or cooking spray.
