  • 3 tablespoons (45g) unsalted butter
  • 6 cloves garlic, minced
  • ½ cup (120ml) low-sodium chicken broth
  • ¼ cup (60ml) heavy cream
  • 1 tablespoon (15ml) fresh lemon juice
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • Optional: 4 slices bacon, cooked and crumbled
  • Optional: 2 green onions, sliced
  • Optional: 1 teaspoon Cajun seasoning

Instructions

  1. Prep ingredients: Mince garlic, chop parsley, grate cheese, and pat shrimp dry.
  2. In a 3-quart saucepan, combine water, milk, and salt. Bring to a boil over medium-high heat.
  3. Slowly whisk in grits, reduce heat to low, and simmer for 15-20 minutes, stirring frequently to prevent lumps.
  4. Stir in 2 tablespoons butter and cheddar cheese until melted and smooth. Season with salt and pepper. Cover and keep warm.
  5. Heat 3 tablespoons butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook 1-2 minutes per side until pink. Remove shrimp and set aside.
  6. Reduce heat to medium. Add garlic and red pepper flakes to the skillet, sautéing for 30 seconds until fragrant.
  7. Pour in chicken broth and heavy cream, scraping up browned bits. Simmer for 1-2 minutes until sauce thickens slightly.
  8. Return shrimp to the skillet, toss in sauce for 30 seconds, and stir in lemon juice. Adjust seasoning with salt and cayenne.
