A vibrant, creamy Greek salad made with a lemon-dill yogurt dressing that is ready in just 15 minutes. This hearty, protein-packed meal is perfect for busy weeknights and keeps you full without the guilt.

- 2 large English cucumbers (about 600g), sliced into half-moons
- 2 cups cherry or grape tomatoes (300g), halved
- 1 small red onion (about 100g), thinly sliced
- 1 cup Kalamata olives (150g), pitted
- 1 block feta cheese (200g), crumbled
- 1/2 cup fresh parsley, chopped
- 1 cup Greek yogurt (240g), full-fat
- 3–4 tablespoons fresh lemon juice (from 1–2 lemons)
- 3 tablespoons extra virgin olive oil (45ml)
- 1 teaspoon dried dill
- 1 clove garlic, minced or grated
- Sea salt and black pepper, to taste
Instructions
- Wash cucumbers and tomatoes. Slice cucumbers into half-moons and halve the cherry tomatoes. Thinly slice the red onion and chop the parsley. Set aside.
- In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, minced garlic, dried dill, salt, and pepper until smooth and emulsified.
- In a large mixing bowl, combine cucumbers, tomatoes, red onion, olives, and parsley. Toss gently.
- Pour the dressing over the vegetables and toss to coat generously.
- Crumble the feta cheese over the top and gently toss everything together one more time, being careful not to crush the tomatoes.
- For best flavor, let the salad sit in the fridge for at least 20 minutes before serving to allow flavors to meld.
Notes
Use full-fat Greek yogurt for the best creamy texture. Crumble your own feta rather than using pre-crumbled for better flavor and texture. If cucumbers are watery, sprinkle with salt and let sit for 10 minutes, then rinse and pat dry. Do not freeze this salad as the vegetables will become mushy.
