Description

A quick, one-dish weeknight dinner featuring layers of crispy rotisserie chicken, spiced black beans, and corn tortillas baked in enchilada sauce with melted cheese.


Ingredients

  • 2 cups shredded rotisserie chicken (about 300g)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1215 small corn tortillas
  • 2 cups (480ml) enchilada sauce
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups (200g) shredded Mexican blend cheese
  • 1 tablespoon oil
  • Optional: ½ cup frozen corn, thawed
  • Optional: 2 tablespoons diced jalapeños
  • Optional: ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat 1 tablespoon of oil in a large skillet over medium heat. Add diced onion and cook for 2-3 minutes until softened.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add shredded chicken, drained black beans, cumin, chili powder, and corn (if using) to the skillet. Stir to combine and heat through for 1 minute.
  5. Spread ½ cup of enchilada sauce on the bottom of a 9×13-inch baking dish.
  6. Layer tortillas, half the chicken/bean mixture, ½ cup cheese, and ½ cup sauce. Repeat layers.
  7. Finish with a final layer of tortillas, remaining sauce, and remaining cheese.
  8. Bake for 20 minutes until cheese is melted and bubbling. Broil for 1-2 minutes for extra crispiness if desired.
  9. Let rest for 5 minutes before serving. Garnish with cilantro, avocado, and sour cream.

Notes

Drain and rinse beans thoroughly to prevent a watery casserole. Warm tortillas in the microwave for 10 seconds to make them pliable. Use thick enchilada sauce to avoid sogginess. Let the casserole rest for 5 minutes after baking to allow layers to set.
