Crockpot Beef and Broccoli: Easy Low-Carb Dinner

Description

A hands-off, budget-friendly slow cooker meal that tastes better than takeout. This low-carb friendly dish features tender beef and crisp broccoli in a sticky, savory garlic sauce.


Ingredients

  • 2 pounds beef chuck roast or flank steak, cut into thin bite-sized strips
  • 2 tablespoons cornstarch
  • 1/2 cup soy sauce (low-sodium recommended)
  • 1 tablespoon Worcestershire sauce
  • 68 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons rice vinegar
  • 3 tablespoons honey or brown sugar
  • 1 teaspoon toasted sesame oil
  • 1/2 cup water or low-sodium broth
  • 2 large heads broccoli, cut into florets
  • 1 medium red bell pepper, sliced (optional)
  • 34 stalks green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds, toasted (optional)

Instructions

  1. Pat the beef dry and cut into thin strips. Place in a mixing bowl, sprinkle with cornstarch, and toss to coat lightly.
  2. In a separate bowl, whisk together soy sauce, Worcestershire sauce, garlic, ginger, rice vinegar, honey, sesame oil, and water/broth.
  3. Place the coated beef in the bottom of a 4-6 quart slow cooker. Pour the sauce over the beef and stir gently to coat.
  4. Cover and cook on LOW for 4-6 hours (or HIGH for 2-3 hours).
  5. About 30 minutes before serving, add broccoli and bell peppers on top. Pour any remaining sauce over the vegetables.
  6. Cover and cook on HIGH for the final 30 minutes until broccoli is tender-crisp.
  7. Check sauce consistency. If too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water to make a slurry, stir into the pot, and cook on HIGH for 10-15 minutes until thickened.
  8. Serve hot, garnished with green onions and sesame seeds.

Notes

Add broccoli in the last 30 minutes to prevent it from becoming mushy. Use low-sodium soy sauce to control salt levels. If using flank steak, reduce cooking time slightly as it is leaner than chuck roast. This recipe does not freeze well due to the broccoli texture.
