  • 2 tablespoons butter or olive oil
  • 8 ounces cremini or white button mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 0.5 cup full-fat sour cream
  • 1 teaspoon dried thyme
  • 1 tablespoon flour (optional, for thickening)

Instructions

  1. Pat pork chops dry and season generously with salt and pepper.
  2. Heat butter or oil in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté diced onion for 3-4 minutes until soft. Add sliced mushrooms and cook for 5 minutes until browned. Add minced garlic in the last minute.
  4. Transfer the mushroom and onion mixture to the bottom of a 6-quart slow cooker.
  5. Pour in beef broth and stir in the cream of mushroom soup to create the gravy base.
  6. Nestle the seared pork chops into the mixture, ensuring they are mostly submerged. Sprinkle with dried thyme.
  7. Cover and cook on Low for 6-8 hours or on High for 3-4 hours until pork reaches an internal temperature of 145°F.
  8. About 30 minutes before serving, stir in sour cream. Do not boil after adding sour cream to prevent curdling.
  9. Taste and adjust seasoning with salt and pepper. Serve over mashed potatoes, egg noodles, or rice.

Notes

Do not skip searing the pork chops for better flavor. Add sour cream off-heat to prevent curdling. Use low-sodium broth and soup to control salt levels. For a thicker gravy, mix 1 tablespoon flour with water and stir in during the last 30 minutes of cooking.
