  • 2 pounds fresh strawberries (hulled and sliced)
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream (cold)
  • ¼ cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 can (15oz) buttermilk biscuits
  • 2 tablespoons butter (melted)
  • Extra confectioners’ sugar (for dusting)
  • ¼ cup strawberry jam (optional)

Instructions

  1. Hull and slice the strawberries. Toss them with granulated sugar, lemon juice, and 1 teaspoon vanilla extract in a large bowl. Let sit at room temperature for at least 15 minutes to macerate.
  2. Pour the cold heavy cream into a chilled mixing bowl. Add confectioners’ sugar and 1 teaspoon vanilla extract. Beat on medium-high speed until stiff peaks form. Cover and refrigerate until ready to serve.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Separate the biscuits and place them on the sheet, about 2 inches apart. Brush tops lightly with melted butter.
  4. Bake biscuits for 10-12 minutes until golden brown. Remove from oven and let cool on a rack for 5 minutes.
  5. Slice the cooled biscuits in half horizontally. Place the bottom half on a plate or bowl.
  6. Spoon a generous amount of macerated strawberries and their syrup over the biscuit base.
  7. Top with a large dollop of whipped cream. Add another layer of strawberries if desired.
  8. Place the top half of the biscuit on top. Dust with extra confectioners’ sugar and serve immediately.

Notes

For best results, keep the cream and bowl very cold to ensure the whipped cream whips properly. Do not assemble the shortcake too early to prevent soggy biscuits. If using frozen strawberries, thaw and drain excess liquid thoroughly. Store-bought buttermilk biscuits are recommended for speed and texture.
