Ingredients
- 12 large eggs
- 1/2 cup whole milk (or skim/almond milk)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup fresh or frozen spinach (thawed and squeezed dry if frozen)
- 1/2 cup crumbled feta cheese
- 1/4 cup finely diced yellow onion
- Optional: 1/2 cup cooked bacon or sausage, crumbled
- Optional: Pinch of red pepper flakes
- Optional: 1/2 cup cherry tomatoes, halved and patted dry
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with non-stick cooking spray.
- If using frozen spinach, thaw it and squeeze out all excess water using your hands or a clean kitchen towel. Dice the onion finely.
- In a large mixing bowl, crack the eggs and add the milk, salt, and pepper. Whisk vigorously until the mixture is uniform and slightly frothy.
- Add the dried spinach, diced onion, crumbled feta, and any optional add-ins to the egg mixture. Stir gently with a spatula until evenly distributed.
- Divide the mixture evenly among the 12 muffin cups, filling them about 3/4 full.
- Bake for 15-18 minutes until the tops are set, slightly golden, and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing or serving.
Notes
Ensure spinach is completely dry to prevent soggy muffins. Season eggs well before baking as flavors mute during cooking. Eggs continue to cook after removal from the oven, so remove when slightly jiggly to avoid rubbery texture. Store in airtight containers in the fridge for up to 4 days or freeze for up to 3 months.
