Ingredients
Scale
- 2 cups red seedless grapes
- 3 tablespoons honey
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 1 wheel brie cheese (about 8oz / 225g)
- 1 cup aged cheddar, diced or sliced (about 120g)
- 4 ounces prosciutto
- 1 box crackers (about 200g), mix of water and seeded
- 1/2 cup walnuts or pecans, toasted
- 4 fresh figs, halved (optional)
- 2 squares dark chocolate, broken into pieces
- 2 tablespoons mustard (whole grain or honey)
- 1 apple or pear, sliced thin
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, toss grapes with honey, chopped rosemary, olive oil, and salt until lightly coated.
- Spread grapes in a single layer on the baking sheet. Roast for 10-12 minutes until they start to burst and honey is bubbling. Let cool for 5 minutes.
- While grapes roast, prep other ingredients: bring brie to room temperature, slice cheddar, slice apples/pears, halve figs, and fold prosciutto.
- Toast nuts in a dry pan for 2-3 minutes until fragrant.
- Arrange the board: place brie in the center, add cheddar around it, scatter crackers and prosciutto in gaps, and add fruit slices.
- Add the warm or room-temperature honey-roasted grapes to the board.
- Sprinkle toasted nuts around the board, add chocolate pieces, and place mustard in small ramekins.
- Finish with a final sprinkle of flaky salt on the grapes if desired.
Notes
Roast grapes ahead of time for better flavor melding. Serve cheese at room temperature for best flavor. Toast nuts for extra crunch. Ensure grapes are in a single layer to prevent steaming.
