Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray, optionally dusting with flour or lining with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt until evenly combined.
  3. In a separate bowl, whisk the sugar, vegetable oil, eggs, and pumpkin puree until smooth and uniform.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a wooden spoon or spatula just until the flour disappears. Do not overmix; a few small lumps are okay.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes. Check at 50 minutes by inserting a toothpick into the center; it should come out clean or with moist crumbs. If wet, bake for 5 more minutes.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
