Ingredients

  • 2 medium apples (about 12oz / 340g), peeled, cored, and sliced into thin wedges (mix of Granny Smith and Honeycrisp recommended)
  • 1 sheet puff pastry (9×12 inches / 250g), thawed
  • 2 tablespoons butter
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons salted caramel sauce
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt (for sprinkling)
  • Optional: 1/2 teaspoon vanilla extract
  • Optional: 1 tablespoon chopped walnuts

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss apple slices with sugar, cinnamon, nutmeg, and vanilla extract (if using) in a small bowl.
  3. Heat butter in a small skillet over medium heat. Add apple slices and sauté for 6-8 minutes until tender and slightly caramelized.
  4. Remove from heat and stir in salted caramel sauce. Let filling cool for 5 minutes.
  5. Unroll puff pastry and cut into two squares (or rectangles).
  6. Place one pastry square on the baking sheet. Spoon half the apple filling onto the center, leaving a 1-inch border.
  7. Drizzle a little extra caramel over the filling if desired.
  8. Brush edges with egg wash. Top with the second pastry square and press edges firmly with a fork to seal.
  9. Cut three small slits in the top for steam to escape.
  10. Brush tops with remaining egg wash and sprinkle with coarse sea salt.
  11. Bake for 15-18 minutes until puffed and golden brown.
  12. Cool on the baking sheet for 5 minutes before serving.

Notes

Keep pastry cold to ensure flakiness. Do not overfill to prevent bursting. The filling will be extremely hot when fresh out of the oven, so allow it to cool for at least 5 minutes. For best results, use a toaster oven or air fryer for small batches.
