- 2 large bags (12–14 cups) sturdy tortilla chips
- 1 pound (450g) ground beef (80/20 blend)
- 1 can (15oz) black beans, drained and rinsed
- 2–3 fresh jalapeños, sliced
- 2 cups sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 4 oz cream cheese, softened and cubed
- 4 stalks green onions, sliced
- ½ cup black olives, sliced
- 2 medium tomatoes, diced
- 1 packet taco seasoning (or homemade blend)
- Splash of water
- Sour cream and salsa for serving
- Optional: Hot sauce, fresh cilantro, guacamole, frozen corn kernels
Instructions
- Preheat oven to 400°F (200°C).
- Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
- Stir in taco seasoning and a splash of water. Simmer for 2 minutes until thickened.
- Add drained black beans to the beef and stir to combine. Keep warm.
- Shred cheeses and cube the cream cheese. Slice jalapeños, green onions, and dice tomatoes.
- Line a large sheet pan (18×13 inches) with parchment paper.
- Spread tortilla chips in a single layer on the pan.
- Scatter the seasoned beef and black beans evenly over the chips.
- Generously sprinkle shredded cheddar and Monterey Jack over the meat. Scatter cream cheese cubes across the top.
- Bake for 8-10 minutes until cheese is bubbling and chip edges are golden brown.
- Remove from oven. Immediately sprinkle sliced jalapeños, green onions, and diced tomatoes over the hot cheese.
- Drizzle with hot sauce if desired.
- Serve immediately with sour cream, salsa, and guacamole on the side.

Do not overcrowd the pan; spread chips in a single layer to ensure crispiness. Shred your own cheese for better melting. Drain beans thoroughly to prevent sogginess. Add fresh toppings like tomatoes and cilantro after baking to maintain texture and color. If serving late, keep the pan in a 200°F oven between quarters.
