Description
A refreshing, homemade summer drink combining fresh strawberries, tart kiwis, and bright lemon juice with a touch of honey. It’s complex, naturally pink, and ready in under 20 minutes.
Ingredients
Scale
- 1 cup strawberries, hulled and roughly chopped (about 150g)
- 2 medium kiwis, peeled and chopped (about 120g)
- 3 large lemons, juiced (about 1/2 cup juice)
- 1/2 cup honey or agave nectar (120ml)
- 2 cups cold water (480ml)
- Ice cubes
- Fresh mint leaves for garnish (optional)
- Extra fruit slices for garnish (optional)
Instructions
- Hull the strawberries and chop them roughly. Peel the kiwis and chop them into chunks.
- Add the chopped strawberries and kiwis to a blender. Blend on high until smooth. If too thick, add a splash of water.
- If using white sugar, make a simple syrup by heating 1/2 cup sugar with 1/4 cup warm water until dissolved. If using honey or agave, measure it out.
- Squeeze the lemons to get about 1/2 cup of fresh juice, removing seeds if necessary.
- Pour the fruit puree into a large pitcher with the lemon juice and sweetener. Stir well.
- Add the 2 cups of cold water and stir again. Taste and adjust sweetness or tartness as needed.
- Serve over ice cubes, garnished with mint leaves and fruit slices.
Notes
Use cold ingredients for the best refreshing effect. If you prefer a smooth texture without pulp, strain the puree through a fine-mesh sieve. A pinch of salt can enhance the sweetness. The lemonade is best enjoyed fresh but keeps in the fridge for up to 2 days.
