  • 2 tablespoons fresh lime juice
  • 12 tablespoons simple syrup or honey
  • 1 cup ice (optional, if fruit isn’t frozen hard enough)
  • Lime wheels for garnish
  • Mint or edible flowers for garnish (optional)
  • Shredded coconut for rimming (optional)

Instructions

  1. Prep the fruit: If using fresh fruit, cut into cubes and freeze for at least 4 hours. If using frozen fruit, ensure chunks are small enough for your blender.
  2. Juice the limes: Squeeze fresh limes to get 2 tablespoons of juice, removing any seeds.
  3. Blend the base: Add frozen mango, pineapple, lime juice, and sweetener to a high-speed blender. Pulse briefly to break down chunks.
  4. Blend to perfection: Blend on low, gradually increasing to high, for 30-60 seconds until a thick slush forms. Add a splash of water or coconut water only if the blender is stuck.
  5. Taste and adjust: Taste the mixture. Add more lime for tartness or more syrup for sweetness if needed.
  6. Serve: Pour into glasses. Rim glasses with coconut if desired. Garnish with lime wheels and mint. Serve immediately.

Notes

Use frozen fruit instead of fresh fruit and ice to prevent a watery, diluted drink. The frozen fruit acts as the ice, creating a thick, creamy slush. If using canned pineapple, drain it well. For a lighter version, substitute some water with coconut water. This drink melts quickly, so serve immediately or freeze the blended mixture for up to 1 month and re-blend before serving.
