  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt (or kosher salt)
  • 1/2 teaspoon black pepper, freshly cracked
  • Lemon wedges, for serving

  • Feta cheese, crumbled, optional
  • Tzatziki sauce, for serving

Instructions

  1. Cut chicken breasts into uniform 1.5-inch cubes and place in a large bowl or zip-top bag.
  2. In a small bowl, whisk together lemon juice, olive oil, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper until emulsified.
  3. Pour the marinade over the chicken, ensuring every piece is coated. Cover and refrigerate for at least 4 hours (or overnight).
  4. If using wooden skewers, soak them in water for 30 minutes. Preheat grill to medium-high heat (400°F / 200°C).
  5. Thread the marinated chicken onto skewers, leaving small gaps between cubes. Save a portion of marinade for basting if desired (boil first to kill bacteria).
  6. Place skewers on the grill and cook for 12-15 minutes, turning every 3-4 minutes, until charred and internal temperature reaches 165°F.
  7. Remove skewers from the grill and let rest for 5 minutes to redistribute juices.
  8. Garnish with fresh parsley and a squeeze of lemon. Serve with pita, rice, or salad.

Notes

For best results, marinate for at least 4 hours to ensure tenderness. Do not overcrowd the grill to prevent steaming. Oil the grill grates before cooking to prevent sticking. Chicken thighs can be used as a substitute for breast meat.
