Instructions

  1. Wash and pat dry peaches. Slice in half lengthwise and remove pits. Place cut-side up on a plate.
  2. Melt butter in a small microwave-safe bowl for 30 seconds. Let cool slightly.
  3. Preheat grill to medium-high heat (approx. 400°F/200°C). Ensure grates are clean.
  4. Brush the cut side of each peach half generously with melted butter. Sprinkle about 1 teaspoon of brown sugar over each half, pressing gently to adhere.
  5. Place peaches cut-side down on the grill. Do not touch for 3 minutes to allow grill marks and caramelization to form.
  6. Check peaches; they should release easily. Flip and grill for 1-2 more minutes just to warm the skin side. Remove from grill and place cut-side up on a serving platter.
  7. While peaches grill, whisk mascarpone, vanilla extract, and a tiny pinch of salt in a medium bowl until smooth and spreadable. If too stiff, add a teaspoon of heavy cream or milk.
  8. Dollop a generous spoonful of mascarpone onto the center of each grilled peach half. Sprinkle with flaky sea salt and fresh mint if using. Serve immediately.

Use ripe but firm peaches that yield slightly to pressure. Do not crowd the grill to ensure proper charring. Keep mascarpone cold until serving to maintain texture. For a dairy-free version, substitute mascarpone with chilled coconut cream. If using a stovetop grill pan or oven broiler, monitor closely to prevent burning.
