A quick, one-pan weeknight dinner featuring ground turkey, sweet potatoes, and kale. This budget-friendly meal is kid-approved, nutrient-dense, and costs less than half of a takeout order.

- 1.5 lbs ground turkey (93% lean)
- 2 medium sweet potatoes (about 1 lb), peeled and diced
- 2 large bunches kale (about 4 cups chopped), stems removed
- 1 medium yellow or white onion, diced
- 4 cloves garlic, minced
- 1 cup chicken broth (low-sodium)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Optional: 1 can black beans, drained
- Optional: 1/2 cup crumbled feta cheese
Instructions
- Prep ingredients: Peel and dice sweet potatoes into 1/2-inch cubes. Chop onion, mince garlic, and chop kale leaves into bite-sized pieces.
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon. Cook until browned and no longer pink (5-7 minutes). Season with salt and pepper.
- Push turkey to the side or remove from pan. Add diced onion to the empty space and cook for 2-3 minutes until soft. Add garlic and all spices (paprika, cumin, garlic powder, onion powder, red pepper flakes). Stir constantly for 1 minute until fragrant.
- Return turkey to the pan with onions. Add diced sweet potatoes and stir to coat in spices. Pour in chicken broth so it comes halfway up the potatoes. Cover and simmer for 10-12 minutes until potatoes are tender.
- Add chopped kale to the skillet. Stir to combine. Cover and cook for 3-4 minutes until kale is wilted and tender.
- Taste and adjust seasoning with salt and pepper. If using, stir in black beans to heat through. Serve hot, optionally topped with feta cheese.
Notes
Cut potatoes uniformly for even cooking. Do not skip the broth as it adds flavor and helps steam the potatoes. If using 99% lean turkey, be careful not to overcook to avoid dryness. This recipe freezes well for up to 3 months. Reheat with a splash of water or broth to maintain moisture.
