  • 1.5 lbs (680g) salmon fillets (center-cut, about 6 oz each)
  • 1 lb (450g) asparagus spears
  • 3 tablespoons extra virgin olive oil
  • 2 medium lemons (1 for juice, 1 for zest)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Kosher salt and freshly cracked black pepper, to taste
  • 1 tablespoon butter (optional, for finishing)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch sheet pan with aluminum foil and lightly spray with non-stick cooking spray.
  2. Wash and pat dry the asparagus. Trim the woody ends by bending one spear to find the natural breaking point and using it as a guide to trim the rest. Place asparagus on one side of the prepared pan.
  3. In a small bowl, whisk together olive oil, minced garlic, lemon zest, dried oregano, dried parsley, salt, and pepper.
  4. Pat salmon fillets dry with paper towels. Place fillets on the other side of the pan, ensuring they are not crowded. Drizzle the oil mixture generously over the salmon and rub it in. Sprinkle with extra salt and pepper.
  5. Roast in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is opaque throughout, and the asparagus is tender-crisp.
  6. Remove from oven. If using, dot salmon with butter. Squeeze fresh lemon juice over everything and serve immediately with lemon wedges on the side.

Notes

Do not crowd the pan to ensure roasting instead of steaming. Pat salmon dry before cooking for better texture. Use fresh lemon juice and zest for best flavor. If asparagus is cooking slower than salmon, remove salmon and roast asparagus for 2-3 more minutes. Leftovers can be refrigerated for up to 3 days.
