Instructions

  1. Add 1/2 cup rolled oats and 1 tablespoon chia seeds to a mason jar or airtight container.
  2. Add 1/2 cup cottage cheese, 1/4 cup milk, 1 tablespoon honey (or sweetener), 1/2 teaspoon vanilla extract, and a pinch of salt.
  3. Mash the cottage cheese curds thoroughly with a spoon or fork until the mixture is smooth and creamy with no visible curds.
  4. Stir everything together until well combined. The mixture should be thick and sticky.
  5. If adding toppings like fresh fruit or granola, reserve them for the morning to maintain texture. If using frozen berries, they can be mixed in now.
  6. Seal the jar tightly and refrigerate for at least 4 hours, ideally overnight (8+ hours).
  7. Serve cold with desired toppings such as fresh berries, nut butter, or granola.

Notes

Do not use instant oats (they turn to mush) or steel-cut oats (they don’t soften enough). Mash the cottage cheese thoroughly to ensure a smooth, creamy texture. If using protein powder, add an extra splash of milk as it absorbs liquid. These store well in the fridge for up to 5 days.
