Description

A cheap, easy, and delicious vegetarian party appetizer featuring creamy, spicy jalapeno and cheese filling baked in mushroom caps with a crunchy panko topping.

  • 32 large white button mushrooms (about 1.5 lbs)
  • 2 tablespoons unsalted butter
  • 1/2 cup panko breadcrumbs
  • 8 oz cream cheese, softened to room temperature
  • 1 cup shredded sharp cheddar cheese
  • 2 medium jalapenos, finely diced
  • 3 stalks green onions, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • Black pepper, to taste
  • 1/4 cup cooked and crumbled bacon bits (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil and lightly grease.
  2. Wipe mushrooms clean with a damp paper towel. Use a small spoon to gently scoop out the stems from the center of each cap, creating a cup shape. Place caps stem-side up on the baking sheet.
  3. In a small bowl, combine softened cream cheese, shredded cheddar, diced jalapenos, green onions, garlic, salt, and pepper. Mix until smooth. Add bacon bits if using.
  4. Spoon the filling into each mushroom cap, filling them about 3/4 full. Smooth the top slightly.
  5. Melt the butter and mix it with the panko breadcrumbs. Sprinkle the breadcrumb mixture evenly over the stuffed mushrooms.
  6. Bake for 15-20 minutes until mushrooms are tender and tops are golden brown and crispy.
  7. Let cool for 2-3 minutes before serving warm.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. If using jarred jalapenos, drain and pat dry thoroughly to prevent watery filling. Do not overbake as mushrooms release water and can become mushy. For a milder version, remove seeds from jalapenos or omit them entirely.
