Description

An easy, no-bake 5-ingredient dessert featuring layers of chocolate wafers and creamy peanut butter mixture. This icebox cake requires zero oven time, making it perfect for holidays, hot weather, or busy weeknights.


Ingredients

  • 8 ounces (225g) full-fat cream cheese, softened
  • 2 cups (480ml) heavy cream, cold
  • 1 cup (250g) peanut butter (crunchy or smooth)
  • 1 teaspoon vanilla extract
  • 1 package (30-35 cookies) chocolate wafers
  • Optional: Chocolate syrup or caramel for drizzling
  • Optional: Chopped roasted peanuts for garnish

Instructions

  1. Whip the cold heavy cream in a chilled bowl using an electric mixer on medium-high speed until stiff peaks form. Set aside.
  2. In a separate large bowl, beat the softened cream cheese until smooth. Add the peanut butter and vanilla extract, beating until fully combined.
  3. Fold one-third of the whipped cream into the cream cheese mixture to lighten it. Gently fold in the remaining whipped cream until just combined.
  4. Lightly grease a 9×13 inch baking dish.
  5. Layer a single layer of chocolate wafers on the bottom of the dish.
  6. Spread one-third of the peanut butter cream mixture over the cookies.
  7. Repeat with another layer of cookies and another third of the cream.
  8. Finish with a final layer of cookies and the remaining cream on top. Smooth the top.
  9. Optionally drizzle with chocolate syrup or caramel and sprinkle with chopped peanuts.
  10. Cover tightly with plastic wrap, pressing it directly onto the surface of the cream.
  11. Refrigerate for at least 8 hours or overnight until the cookies soften.
  12. Slice with a sharp knife dipped in hot water and served chilled.

Notes

Ensure all ingredients, especially the cream and bowl, are cold for best whipping results. The cake must chill overnight for the cookies to soften properly. It does not freeze well due to the cream cheese and whipped cream texture. Can be made gluten-free by using GF wafers and dairy-free by using plant-based alternatives.
