  • 1/2 cup pure maple syrup
  • 2 tablespoons whole grain mustard
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Pat pork tenderloins dry with paper towels and trim off any silver skin. Tie with kitchen twine every inch to keep them round.
  2. Wrap each tenderloin diagonally with bacon slices, overlapping slightly, and secure ends with twine.
  3. In a small saucepan, combine maple syrup, mustard, soy sauce, garlic, black pepper, and smoked paprika. Warm over medium heat for 2-3 minutes until smooth and slightly thickened.
  4. Optional: Sear bacon-wrapped tenderloins in a hot skillet for 1-2 minutes per side until lightly browned.
  5. Preheat oven to 400°F (200°C). Place tenderloins on a foil-lined baking sheet and brush generously with glaze.
  6. Roast for 20-25 minutes, basting with glaze every 10 minutes, until internal temperature reaches 145°F (63°C).
  7. Remove from oven and let rest for 5 minutes before slicing into 1/2-inch medallons. Drizzle with remaining glaze and serve.

Use thick-cut bacon to prevent burning. Ensure pork reaches 145°F for safety and juiciness. Do not skip the resting period to retain juices. For a spicy kick, add red pepper flakes to the glaze.
