- 2 pounds wild-caught salmon fillets
- 2 cups Basmati or Jasmine rice (uncooked)
- 1 large English cucumber or 2 Persian cucumbers, diced
- 1 cup feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 2 tablespoons olive oil (for cooking)
- 2 lemons (1 for juicing, 1 for slicing)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 cup fresh parsley or dill, chopped
Instructions
- Rinse 2 cups of rice under cold water until clear. Cook with 3 cups of water and a pinch of salt according to package instructions or rice cooker settings.
- While rice cooks, chop cucumber into small half-moons, halve cherry tomatoes, pit and halve olives, and crumble feta cheese.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Pat salmon fillets dry with paper towels. Rub with olive oil and sprinkle with dried oregano, salt, and pepper.
- Bake salmon for 12-15 minutes until opaque and flaking easily with a fork.
- Whisk together juice of one lemon, 2 tablespoons olive oil, salt, and pepper to make the dressing.
- Flake cooked salmon into large chunks.
- Divide warm rice among four bowls. Top with salmon, cucumber, tomatoes, and olives.
- Crumble feta generously over the top and drizzle with lemon dressing.
- Garnish with fresh parsley or dill and serve immediately.
Notes
Do not overcook the salmon as it continues to cook after removal from the oven. For best texture, serve veggies at room temperature. Leftovers can be stored in the refrigerator for up to 3 days; add a splash of water when reheating rice.
