  • 1214 oz sirloin steak, cut into 1-inch cubes
  • 2 tablespoons salted butter
  • 45 cloves garlic, minced
  • 1 tablespoon coconut oil or olive oil
  • Salt and black pepper, to taste
  • 8 oz white button mushrooms
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the steak bites dry with paper towels and season generously with salt and pepper.
  2. Preheat oven to 400°F (200°C).
  3. Toss mushrooms with olive oil, garlic powder, dried thyme, dried rosemary, salt, and pepper. Spread in a single layer on a baking sheet.
  4. Roast mushrooms in the oven for 15 minutes.
  5. While mushrooms roast, heat coconut oil or olive oil in a cast-iron skillet over medium-high heat.
  6. Add steak bites to the hot skillet in a single layer (cook in batches if necessary). Sear undisturbed for 1-2 minutes until browned, then toss and cook for another 2-3 minutes until desired doneness.
  7. Reduce heat to medium. Add butter and minced garlic to the skillet. Swirl for 30-60 seconds until fragrant.
  8. Toss steak bites in the garlic butter to coat evenly.
  9. Remove mushrooms from the oven and add them to the skillet with the steak bites.
  10. Toss everything together for 30 seconds to combine flavors. Serve immediately.

Notes

Do not overcrowd the skillet when searing the steak to ensure a good crust. Pat mushrooms dry before roasting to prevent steaming. Steak bites cook quickly, so avoid overcooking to maintain tenderness. Leftovers can be stored in the fridge for up to 3 days.
