  • Pink, yellow, and lavender gel food coloring
  • Optional: Zest of 1 lemon

Instructions

  1. Preheat oven to 300°F (150°C). Line a 4×2 inch mini loaf pan with parchment paper, leaving an overhang for easy removal.
  2. In a clean, dry bowl, whip room-temperature egg whites on medium-high speed until stiff peaks form (about 3-4 minutes).
  3. In a separate medium bowl, beat the softened cream cheese until smooth. Add sweetener, xanthan gum, vanilla extract, and lemon zest (if using). Mix until well combined.
  4. Gently fold the cream cheese mixture into the whipped egg whites using a spatula until just combined, being careful not to deflate the air.
  5. Fold in the almond flour gently until no streaks remain and the batter is uniform and fluffy.
  6. Divide the batter into three equal bowls. Add pink, yellow, and lavender gel food coloring to each bowl respectively and mix until evenly colored.
  7. Spoon the colored batters into the prepared loaf pan in alternating dollops. Use a knife or skewer to gently swirl the colors together to create a marble effect.
  8. Bake for 25-30 minutes until the bread is puffed, golden on top, and springs back when lightly touched.
  9. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment overhang. Allow it to cool completely on a wire rack before slicing to prevent collapsing.

Notes

Ensure egg whites are at room temperature for proper whipping. Use gel food coloring instead of liquid to avoid altering the batter consistency.
