Description
A creamy, savory, and slightly sweet weeknight risotto that is kid-friendly, budget-friendly, and ready in about 30 minutes. This simplified method reduces active stirring time while maintaining a restaurant-quality texture.
Ingredients
- 1 ½ cups Arborio rice
- 2 cups cooked pumpkin puree (fresh or canned)
- 4 cups chicken or vegetable broth (low-sodium)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter (divided)
- 10–12 fresh sage leaves
- ½ cup dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- 1 tablespoon extra butter for finishing
Instructions
- Prep ingredients: Dice onion, mince garlic, grate Parmesan, and measure pumpkin puree. Keep broth warm in a separate saucepan.
- Sauté aromatics: Melt 2 tablespoons of butter in a heavy-bottomed pot over medium heat. Add onion and a pinch of salt; cook for 3-4 minutes until soft. Add garlic and cook for 1 minute until fragrant.
- Toast rice: Add Arborio rice to the pot. Stir constantly for 2 minutes until edges are translucent and rice smells nutty.
- Deglaze: Pour in white wine (or extra broth). Stir and simmer until liquid has mostly evaporated.
- Add pumpkin and broth: Stir in pumpkin puree. Add hot broth one ladle at a time, stirring gently after each addition. Wait until liquid is mostly absorbed before adding the next ladle. Continue for 15-20 minutes until rice is tender but al dente.
- Make brown butter sage: While risotto finishes, heat remaining 2 tablespoons of butter in a skillet over medium heat. Add sage leaves and swirl until butter turns golden brown and sage crisps. Remove from heat.
- Finish risotto: Remove risotto pot from heat. Stir in Parmesan cheese and 1 tablespoon of butter (mantecatura). Adjust salt and pepper. If too thick, add reserved broth.
- Serve: Spoon risotto into bowls and drizzle with brown butter and crispy sage leaves. Serve immediately.
