A budget-friendly, one-pan roasted chicken dinner with root vegetables and rosemary. This easy weeknight meal feeds four people for under $10 with minimal cleanup.

- 3–4 pounds bone-in, skin-on chicken thighs and drumsticks
- 2–3 pounds root vegetables (carrots, potatoes, parsnips, or sweet potatoes), cut into 1-2 inch chunks
- 3–4 sprigs fresh rosemary (or 1 tablespoon dried)
- 6–8 cloves garlic, peeled and left whole or lightly smashed
- 3–4 tablespoons olive oil
- 1 tablespoon coarse kosher salt
- 1 teaspoon black pepper
- Pinch of red pepper flakes (optional)
- 2 tablespoons butter (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper or foil.
- Peel and chop root vegetables into uniform 1-2 inch chunks. Toss in a bowl with 2 tablespoons olive oil, salt, and pepper. Spread on one side of the sheet pan.
- Pat chicken pieces dry with paper towels. Rub with remaining olive oil and sprinkle generously with salt, pepper, and red pepper flakes. Place skin-side up on the other side of the pan, ensuring pieces are not touching.
- Tuck whole garlic cloves and rosemary sprigs around the chicken and vegetables.
- Roast for 35-45 minutes. Halfway through, check chicken; tent with foil if browning too fast. Chicken is done when internal temperature reaches 165°F (74°C) and juices run clear.
- Remove from oven and let chicken rest for 5 minutes before serving.
Notes
Do not crowd the pan to ensure roasting instead of steaming. Pat chicken dry for crispy skin. Cut vegetables to uniform size for even cooking. Save pan drippings for dressing salads or leftovers. This recipe is naturally gluten-free and can be dairy-free by omitting butter.
