  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium sweet potatoes (about 1.5 lbs), cut into ½-inch cubes
  • 1 medium red onion, sliced into wedges
  • 1 large head broccoli, cut into florets (optional)
  • ½ cup BBQ sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • Optional: Sesame seeds or green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with foil or parchment paper and lightly grease.
  2. Cut sweet potatoes into uniform ½-inch cubes and slice red onion into wedges.
  3. Place sweet potatoes and onions on the baking sheet. Drizzle with olive oil, salt, and pepper. Toss to coat and spread in a single layer with space between pieces.
  4. Place chicken thighs on the pan among the vegetables. Season with a pinch of salt and pepper.
  5. In a small bowl, mix BBQ sauce, minced garlic, and any extra spices. Spoon half the sauce over the chicken and toss to coat. Reserve the rest for later.
  6. Roast in the preheated oven for 20 minutes.
  7. Remove pan from oven. Flip chicken pieces and stir potatoes. If using broccoli, toss it onto the pan now.
  8. Brush the remaining BBQ sauce over the chicken. Return to oven and roast for another 10-15 minutes, or until chicken reaches 165°F internally and potatoes are tender.
  9. Remove from oven and let chicken rest for 5 minutes. Garnish with sesame seeds or green onions if desired. Serve immediately.

Notes

Do not crowd the pan to ensure roasting instead of steaming. Cut vegetables into uniform sizes for even cooking. Chicken breasts can be used but require reduced cooking time. Sweet potatoes do not freeze well; store leftovers in the fridge for up to 4 days.
