  • 1 tablespoon fresh herbs like chives or parsley (optional)

Instructions

  1. Slice sourdough bread into thick slices (about half an inch). Toast in a skillet or toaster until golden and crisp.
  2. Brush the warm toast with butter and set aside.
  3. While toast is cooking, slice avocados in half, remove pits, and scoop flesh into a bowl.
  4. Add a pinch of salt and a squeeze of lemon juice to the avocado, then mash with a fork to desired consistency (chunky or smooth).
  5. Fill a small saucepan with 3-4 inches of water and bring to a gentle simmer (small bubbles, not a rolling boil).
  6. Crack each egg into a small ramekin or measuring cup.
  7. Gently swirl the water to create a vortex and carefully drop one egg into the center. Repeat for remaining eggs, cooking in batches if necessary to avoid overcrowding.
  8. Poach eggs for 3 minutes for a runny yolk or 4 minutes for a firmer yolk.
  9. Remove eggs with a slotted spoon, letting excess water drip off.
  10. Place poached eggs on top of the avocado toast.
  11. Sprinkle with salt, pepper, and red pepper flakes. Serve immediately.
