A refreshing, non-alcoholic summer drink combining sweet watermelon, fresh basil, and sparkling water. It offers the complexity of a cocktail with zero alcohol and minimal effort.


Ingredients

  • 4 cups cubed ripe watermelon (about 1 kg)
  • 2 tablespoons white sugar or simple syrup
  • 3 tablespoons fresh lime juice
  • 1 cup packed fresh basil leaves (sweet Italian basil)
  • 2 cups chilled plain sparkling water
  • Ice cubes
  • Extra basil sprigs for garnish
  • Optional: Tiny pinch of flaky sea salt

Instructions

  1. Cut watermelon into chunks, removing rind and seeds. Blend until completely smooth (about 30 seconds). Pour puree into a pitcher and set aside.
  2. Rinse and dry basil leaves. Place half the leaves in the bottom of glasses (or a bowl for a batch). Add 1 tablespoon of lime juice per glass.
  3. Gently muddle the basil with lime juice using a muddler or spoon back to bruise leaves and release oils. Do not turn into mush.
  4. Pour watermelon puree over the muddled basil. Add remaining lime juice and stir well. Taste and adjust sweetness or tartness as needed.
  5. Fill glasses with ice. Pour the watermelon-basil mixture over ice, filling glasses halfway.
  6. Top off with chilled sparkling water, pouring slowly to preserve bubbles. Stir gently once or twice.
  7. Clap a sprig of fresh basil between palms to release aroma, then drop into glass as garnish. Serve immediately.
