  • ½ cup honey

  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 1 teaspoon sesame oil

Instructions

  1. In a medium bowl, combine milk and panko breadcrumbs. Let sit for 2 minutes to absorb the milk.
  2. Add ground beef, egg, minced garlic, grated ginger, 1 tablespoon soy sauce, chopped green onions, and black pepper to the bowl. Mix gently with hands or a fork until just combined; do not overmix.
  3. Roll the mixture into 1.5-inch diameter balls (yields 20-24 meatballs). Place on a parchment-lined baking sheet.
  4. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add meatballs in batches to avoid overcrowding. Brown for 2-3 minutes per side until browned on all sides. Remove to a plate and set aside.
  5. In a small bowl, whisk together honey, ¼ cup soy sauce, rice vinegar, Sriracha, minced garlic, and the cornstarch-water slurry.
  6. Reduce skillet heat to medium-low. Pour the glaze into the same skillet used for meatballs. Let bubble for 1-2 minutes until slightly thickened.
  7. Return meatballs to the pan, tossing gently to coat evenly in the sauce. Simmer for 2-3 minutes until meatballs are cooked through (internal temperature 160°F) and sauce is glossy.
