- 1 cup sharp cheddar cheese, shredded
- 8 slices thick-cut bacon, cooked crispy and chopped into small pieces
- 1 packet (0.7 oz) dry ranch seasoning mix
- 3 stalks green onions, thinly sliced
- Optional: 2 tablespoons diced jalapeños
- Optional: 1 cup shredded rotisserie chicken
Instructions
- Cook bacon until crispy, drain on paper towels, and chop into small pieces. Thinly slice green onions and shred cheddar cheese. Ensure cream cheese is softened.
- In a large mixing bowl, combine softened cream cheese, shredded cheddar, and ranch seasoning. Mix until smooth and lump-free.
- Lay tortillas flat on a cutting board. Spread a thin, even layer of the cream cheese mixture over each tortilla, leaving a ¼-inch border at the edges.
- Sprinkle chopped bacon and green onions evenly over the cream cheese mixture. Press gently to adhere. Add optional jalapeños or chicken if using.
- Starting from a long edge, tightly roll each tortilla into a log. Pinch the seam to close. Repeat for all tortillas.
- Wrap each log tightly in plastic wrap and place on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes (or up to 1 hour) to firm up.
- Unwrap chilled rolls and slice into 1-inch thick pinwheels using a sharp knife. Use a gentle sawing motion for clean cuts.
- Arrange on a serving platter and serve immediately, or cover and refrigerate until ready to serve.
Notes
Ensure cream cheese is fully softened to avoid lumps and tearing. Chill the rolls thoroughly before slicing for clean cuts. These taste better the next day as flavors meld. Can be frozen as rolled logs for up to 1 month.
