Description

A nostalgic, budget-friendly side dish featuring Yukon Gold potatoes boiled, smashed flat, and roasted until crispy, then topped with a rich garlic parmesan butter sauce.


Ingredients

  • 3 pounds Yukon Gold potatoes
  • 2 tablespoons salt (for boiling water)
  • 2 tablespoons vegetable oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • Optional: ½ teaspoon red pepper flakes
  • Optional: 2 tablespoons chopped chives

Instructions

  1. Wash potatoes and cut into halves or quarters for uniform cooking.
  2. Bring a large pot of salted water to a boil. Add potatoes and cook for 12-15 minutes until tender. Drain well and let steam dry for 2 minutes.
  3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  4. Place hot potatoes on the baking sheet and smash each one flat to about ½ inch thick using the bottom of a heavy mug.
  5. Drizzle vegetable oil over smashed potatoes and coat evenly. Sprinkle with salt and pepper.
  6. Bake for 20 minutes until edges are golden and crispy.
  7. While potatoes bake, melt butter in a small saucepan over medium heat. Add minced garlic and cook for 1 minute without browning.
  8. Remove butter mixture from heat and stir in Parmesan, parsley, and red pepper flakes.
  9. Remove potatoes from oven, drizzle with garlic parmesan butter, and return to oven for 2-3 minutes to melt cheese.
  10. Sprinkle with fresh chives or parsley and serve immediately.

Notes

Ensure potatoes are dry after boiling to maximize crispiness. Use fresh garlic for best flavor. If using russet potatoes, handle gently as they may fall apart. For extra crispiness, broil for the last 2 minutes. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
